This dish is a flavorful and easy way to enjoy smoked sausage.

Yields: 4-6 servings Prep time: 15 minutes Cook time: 45-60 minutes

Ingredients:

  • 1 pound smoked sausage (your favorite variety)
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 8 baby tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Prep the smoker: Preheat your smoker to 225°F. Use a mild wood like apple or hickory for a balanced smoke flavor.
  2. Prep the  vegetables: Slice the onion and bell peppers.
  3. Season the vegetables: In a bowl, toss the tomatoes, sliced onions and peppers with olive oil, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper.
  4. Smoke the sausage: Place the sausage  on the smoker grates. Smoke for 30 minutes.
  5. Add the vegetables: Add the seasoned onions, tomatoes,  and peppers to the smoker grates alongside the sausage.
  6. Continue smoking: Smoke for an additional 15-30 minutes, or until the vegetables are tender and the sausage is heated through.
  7. Serve: Remove the sausage and vegetables from the smoker and serve immediately.
