Instructions:
- Prep the smoker: Preheat your smoker to 225°F. Use a mild wood like apple or hickory for a balanced smoke flavor.

- Add the vegetables: Add the seasoned onions, tomatoes, and peppers to the smoker grates alongside the sausage.
- Continue smoking: Smoke for an additional 15-30 minutes, or until the vegetables are tender and the sausage is heated through.
- Serve: Remove the sausage and vegetables from the smoker and serve immediately.
