Spicy BBQ Tri-Tip
Yields: 6-8 servings Prep Time: 20 minutes (+ marinating time) Cook Time: 45-60 minutes
Ingredients:
- Tri-Tip Roast: 2-3 pounds
- Olive Oil: 2 tablespoons
- Spicy BBQ Rub:
- Brown Sugar: 1/4 cup
- Chili Powder: 2 tablespoons
- Smoked Paprika: 2 tablespoons
- Cumin: 1 tablespoon
- Garlic Powder: 1 tablespoon
- Onion Powder: 1 tablespoon
- Cayenne Pepper: 1/2 – 1 tablespoon (adjust to your heat preference)
- Salt: 1 tablespoon
- Black Pepper: 1 teaspoon
- Apple Cider Vinegar: 1/4 cup
- Spicy BBQ Sauce: Your favorite brand, or homemade (see note)
Equipment:
- Grill (charcoal or gas)
- Meat thermometer
- Aluminum foil
Instructions:

Marinate the Tri-Tip:
- Combine all BBQ rub ingredients in a small bowl.
- Pat the tri-tip dry with paper towels.
- Rub olive oil all over the tri-tip, then generously coat it with the BBQ rub.
- Place the tri-tip in a zip-top bag or container and pour in the apple cider vinegar.
- Marinate in the refrigerator for at least 4 hours, or ideally overnight.

Prepare the Grill:
- Preheat your grill to high heat (450-500°F).
- If using charcoal, create a two-zone fire with hot coals on one side and indirect heat on the other.

Sear the Tri-Tip:
- Remove the tri-tip from the marinade and let it come to room temperature for about 30 minutes.
- Sear the tri-tip over direct heat for 3-5 minutes per side, until it develops a nice crust.

Slow Cook:
- Move the tri-tip to the indirect heat side of the grill.
- Close the lid and cook until the internal temperature reaches your desired doneness:
- Rare: 125-130°F
- Medium-rare: 130-135°F
- Medium: 135-145°F
- Baste with spicy BBQ sauce during the last 15 minutes of cooking.

Rest and Serve:
- Remove the tri-tip from the grill, tent it with foil, and let it rest for 10-15 minutes.
- Slice against the grain and serve with additional BBQ sauce.
